Meet Clio

Hi, I’m Clio, the baker behind Wildflours Bread Co.

For me, sourdough is more than bread. It is creativity, science, tradition, and care all working together through time and fermentation. Every loaf is a process that unfolds slowly over nearly 48 hours, developing flavor, texture, and character naturally.

I bake every batch by hand in small quantities because good bread deserves patience.

There is something incredibly rewarding about transforming flour, water, and salt into a loaf that nourishes both body and soul. From mixing and folding to shaping and scoring, every step matters. Every loaf carries its own personality, shaped by fermentation, temperature, grain, and time.

No two are exactly alike, and that is the beauty of artisan sourdough.

Artisan Sourdough Bread Crafted with Passion in Gainesville, GA

At Wildflours Bread Co., every loaf begins with intention.

Behind the flour-dusted countertops, bubbling sourdough starter, and slow-fermented breads is Clio, the passionate baker and creative heart behind this Gainesville, GA cottage bakery.

What started as a love for real sourdough and thoughtful baking quickly became something deeper. A connection to traditional methods. A respect for locally grown grain. A desire to nourish people through handcrafted food made slowly and intentionally.

Wildflours Bread Co. was built on the belief that bread should feel alive, meaningful, and deeply rooted in community.

This is not fast baking.
This is not factory bread.

This is artisan sourdough crafted patiently, one beautiful loaf at a time.

From Seed to Sourdough

One of the things that makes Wildflours Bread Co. truly unique is our commitment to baking with 100% local, organic fresh-milled flour.

We proudly source our grain from Dayspring Farms in Danielsville, GA, a USDA Certified Organic farm and one of Georgia’s few true “seed-to-sack” grain operations. Dayspring Farms grows, cleans, and stone-mills its heirloom grains entirely on-site, preserving the flavor and nutrition often lost in commercial flour production.

Their grains are the foundation of every loaf we bake.

Using heirloom varieties like Catawba Hard Red Winter Wheat and Rouge de Bordeaux, Wildflours Bread Co. creates sourdough with warm, nutty flavor, rich texture, and incredible depth that mass-produced bread simply cannot replicate.

Most bakeries use only a small percentage of fresh-milled flour because it is far more difficult to work with. Wildflours Bread Co. proudly bakes with 100% fresh-milled flour because the flavor, texture, and nutrition are worth the extra care.

When you taste our bread, you are tasting the grain, the land, the fermentation, and the thoughtful process behind every loaf.

Meet mae

At the heart of every loaf is Mae, Wildflours Bread Co.’s beloved sourdough starter.

Mae is alive. A living culture of wild yeast and beneficial bacteria that transforms flour, water, and salt into naturally fermented sourdough with incredible depth, texture, and flavor.

Fed daily and cared for by hand, Mae gives our bread its signature airy crumb, beautiful crust, and gentle tang that only authentic sourdough can achieve.

No commercial yeast.
No preservatives.
No shortcuts.

Just traditional fermentation doing what it has done for thousands of years.

Some loaves take nearly 48 hours from start to finish because real sourdough cannot be rushed. Every fold, rise, and rest develops flavor naturally while creating bread that feels deeply nourishing and satisfying.

No two loaves are exactly alike, and that is exactly the beauty of artisan baking.

slow bread. real ingredients. thoughtful craft.
